I came across this delicious recipe for avocado spaghetti and I decided to try it out with organic avocados from my in-laws humongous avocado tree. The recipe is insanely delicious and so healthy. I put my own spin on it because, you know, I’m crafty like that! 😉
First things first, I recruited some help because I think it’s uber important to include the kids with fun things like learning to cook. 🙂 Meet our son, Alex. He’s 9 and he’s such a sweet gentleman, an awesome big brother and an amazing special helper. Little Silar is in the background supervising as usual.
We got all the ingredients put together for this meal. I’ll list what we used since we made this batch in a smaller portion size than the original post:
- 2 ripe avocados (soft),
- 1 TBSP lemon juice,
- 2 cloves garlic,
- 1/3 cup oil,
- 1/4 cup chopped fresh basil,
- 1/2 TBSP Italian Seasoning
- Salt to taste,
- Grating of parmesan.
During this process, I chopped up about a 1/2 cup onion and some more garlic and sauteed them on the skillet with some olive oil. We threw in some ground chicken and seasoned with adobo and let that cook. (I didn’t turn my chicken as often after I got the adobo mixed in well. I like my ground chicken chunky!)
Now here comes the fun part, SPIRALIZING the squash! You can easily use another veggie like zuchinni. I bought this veggie spiralizer from Amazon. Totally worth the cost, I use it all the time when I want to substitute veggies for pasta. You just stick the veggie onto the spikes and the blade and start spinning. Alex especially loved spiralizing the veggies.
Next thing you know, you’ve got a plate full of amazing healthy veggie noodles!
So after all this was done, our noodles were started since they don’t take too long to cook. Next, we threw some fresh spinach on top of the cooked ground chicken, then covered it and let it steam for a few minutes.
All we had left to do was to quickly sauté the veggie noodles, and combine the ingredients. I plated the veggie noodles separately since I am the main person who likes veggie noodles here in the house, but everything else I just tossed together in a big bowl and added the pureed avocado to and sprinkled some grated parmesan cheese on top.
And then, we got down to business!
